Denise – The Super Foods History Buff
Denise has a huge influence on the food of t1 tapas. It was Denise who introduced her husband Mike (Day 244) to the concept of Super Foods. Super Foods are 12 foods (beans, blueberries, broccoli, pumpkin, tomatoes, spinach, wild Alaska salmon, yogurt, walnuts, oatmeal, carrots, tea) that if three are taken daily will provide for a healthy lifestyle. This type of knowledge is only the tip of the ice burg for Denise. She is a Carolina girl born in Chapel Hill and raised in Winston Salem. She graduated from Carolina with a degree in ancient medieval history with honors in three years. She was planning on becoming a college professor but decided to support Mike with his first company. I was curious as to why she chose such an unusual degree. It turns out she loves history and that was the closest degree Carolina offered at the time. The longer I talked to Denise the more interesting her story became. She is a big fan of the UK which she has visited 12 times. “I feel like I’m home when I visit” she said. She also grows organic “Old Garden” roses which have been around before the 1900’s. She reads on average three books a week and teaches traditional Chinese medical theory at the Blue Ridge Healing Arts center. Denise also knows how to teach spiritual belly dancing AND brew her own beer. Needless to say she is quite well rounded. There is even an interesting story behind the purple streak in her hair. It’s there so her children know which ear to talk into. Just recently she inexplicably lost her hearing in her left ear. It was one interesting story after another with Denise. I’m sure I only scratched the surface. Her favorite thing about Birkdale… “Books and Beer”.
